Thai Curry Marinade Beef, Chicken, Fish, Lamb, Pork, or Vegetables
1 cup soy sauce 1/2 cup dry white wine 1/4 cup light brown sugar, packed 1 lime, juice and zest removed and reserved 1 orange, juice and zest removed and reserved 1/2 cup peanut oil 2 small red chilis, split lengthwise 1 Tbsp. fresh ginger root, chopped 1 Tbsp. curry powder 1/4 cup cilantro leaves, washed and chopped
Whisk all ingredients in a medium bowl until well blended.
Coconut Ginger Marinade Beef, Chicken, Fish, Lamb, or Pork
1 13.5 oz can unsweetened coconut milk 2 Tbsp. ginger, peeled and chopped 1 Tbsp. soy sauce 2 garlic cloves, crushed 1/2 cup fresh lemon juice 1/2 cup chicken broth or stock 1 Tbsp. rice wine vinegar 2 Tbsp. dark sesame oil 1 small red chili, split lengthwise 1/4 cup green onions, thinly sliced 1/2 tsp. red pepper flakes (optional for extra spiciness)
Whisk all ingredients in a medium bowl until well blended.
Asian Citrus Marinade Beef, Chicken, Fish, Lamb, Pork, or Vegetables
1 cup orange or pineapple juice 1/3 cup fresh lemon juice 1/3 cup fresh lime juice 2 Tbsp. ginger, peeled and chopped 2 garlic cloves, crushed 2 Tbsp. light brown sugar 1/2 cup peanut oil 2 Tbsp. tarragon vinegar 1/2 tsp. red pepper flakes (optional for extra spiciness)
Whisk all ingredients in a medium bowl until well blended.
Korean Marinade Beef, Chicken, Fish, Lamb, Pork, or Vegetables
1 cup soy sauce 1/2 cup mirin 1 Tbsp. fresh ginger, minced 1 Tbsp. garlic cloves, crushed 2 green onions, chopped 1/4 cup dark brown sugar 1 Tbsp. orange peel, minced 2 Tbsp. dark sesame oil
Whisk all ingredients in a medium bowl until well blended.
Sweet Honey-Basil Marinade Chicken or Pork
1/2 cup honey 1 cup red wine vinegar 2 garlic cloves, crushed 1 large shallot, peeled and roughly chopped 2 Tbsp. soy sauce 1/3 cup orange juice 1/4 cup white wine 1/2 cup fresh basil, washed and roughly chopped 1/2 tsp. salt 1/2 tsp. ground black pepper
Whisk all ingredients in a medium bowl until well blended.
Tarragon Mustard Marinade
1/2 cup extra-virgin olive oil 1/2 cup dry white wine or vermouth 1/4 cup Dijon mustard 1/4 cup fresh tarragon, chopped 1 tsp. salt 1 tsp. black pepper, freshly ground
Whisk all ingredients in a medium bowl until well blended. Makes 1 1/2 cups; enough for 4 1/2 pounds of chicken, pork or fish.
Texas Bar-B-Que Sauce & Marinade
1/4 cup vegetable oil 1/2 medium white onion, chopped 2 cloves garlic, chopped 1 cup ketchup 1/2 cup cider vinegar 1/4 cup soy sauce 1/4 cup dark brown sugar 2 Tbsp. Worcestershire sauce 2 tsp. dry mustard 1 tsp. celery seed
In a medium-sized saucepan, heat the oil and sauté the onion and garlic for 5 minutes. Add the remaining ingredients and simmer, stirring frequently, until slightly thickened, about 10 minutes. Cool the marinade before using. Makes 2 cups; enough for 6 pounds of beef, chicken or pork.
South of the Border Marinade Beef, Chicken, Lamb, or Pork
12 oz bottle corona beer 1/2 cup canola or vegetable oil 1/2 cup fresh lemon juice 1/2 cup fresh lime juice 1/2 tsp. chili powder 1/2 tsp. cumin powder 2 small red chilies, split lengthwise 1 tsp. dried orange peel 1/4 cup light brown sugar, packed 2 garlic cloves, crushed
Whisk all ingredients in a medium bowl until well blended.
Citrus Mint Lamb Marinade
1/2 cup orange juice 1/4 cup fresh lemon juice 1/4 cup olive oil 1 cup fresh mint leaves, washed and roughly chopped 1 garlic clove, crushed 3 Tbsp. balsamic vinegar 2 cinnamon sticks
Whisk all ingredients in a medium bowl until well blended.
Incredible Fajita Marinade Beef or Chicken
1/2 cup fresh lime juice 1/4 cup orange juice 1/4 cup oil 2 Tbsp. soy sauce 2 Tbsp. red wine vinegar 2 Tbsp. light brown sugar 2 tsp. dried oregano leaves 1/2 tsp. ground black pepper
